Mustard essential oil is extracted from small mustard seed produced by an annual plant that have branched steam, and roughly Iyre-shaped leaves. It grows up to 16 cm in height and is grown all summer in various parts of India. The oil is extracted from small and dark brown seeds. Widely used for culinary purpose, mustard seeds are also used for various medicinal activities, such as to aid digestion, promote appetites, cure rheumatism, arthritis, etc.

History: | Mustard essential oil is produced when ground mustard seeds are mixed with water, vinegar or any other similar liquid. Then, a chemical reaction between the enzyme myrosinase and a glucosinolate known as sinigrin results in production of this oil. |
Precautions: | Mustard essential have high content of allyl isothiocyanate and therefore it is toxic. The oil is also a skin and mucus membrane irritant. |
